Growing up, one of my fondest memories (as well as smells) was Banana Bread. Whether it was my mama mixing a loaf of it one mid-day after college, or on a Sunday morning after church at my grandma’s house, there was usually a loaf of banana bread existing around to be devoured.

Now that I have become entirely gluten totally free, it is wonderful to see a lot of healthy adaptations of this traditional recipe. I added dried cherries and walnuts to extract to give it a nuttier, sweeter taste. Hope you enjoy this different version of an old-time favored as much as I do!

Ingredients

– 3 medium ripe bananas

– 1/2 tsp pure vanilla extract

– 1 egg (or sub 1 chia or flaxseed – vegan)

– 3 Tbsp grape seed or coconut oil, melted

– 1/2 cup packed brown sugar

– 2-3 Tablespoon honey, depending upon perfection of bananas

– 3.5 tsp baking powder

– 3/4 tsp sea salt

– 1/2 tsp ground cinnamon

– 3/4 cup almond or dairy milk

– 1 1/2 cup almond meal

– 1 3/4 cup gluten free oats

– 1/2 cup dried cherries

– 3/4 cup chopped walnuts

Instructions

1. Preheat oven to 350 and also line a loaf pan with parchment paper or spray with nonstick spray.

2. Mash banana in a big dish. Add all active ingredients via almond milk and blend vigorously to integrate. Finally, include almond dish, oats, cherries, nuts and stir.

3. Cook for 1 hour – 1 hr 15 mins. When ready, it should feel firm and golden brownish on top.

4. Let awesome totally prior to cutting.

5. Serve with butter as well as honey or as is. I topped my own with dried out cranberries and also shredded coconut for an added punch. Shop leftovers in a protected container for as much as a couple of days. Cut as well as ice up for longer term storage.
